Abstract The department of Piura is the main mango producer in Peru accounting for 66.7% national crop. objective study was to characterize fruits forty varieties preserved since 1969 northwestern Peru. were harvested at El Chira Agrarian Experimental Station, Department from December 2019 January 2020. Thirteen quantitative fruit variables evaluated: width, thickness, length, weight, seed percentage seed, fresh skin, pulp, texture, °Brix, and pulp / ratios. with highest Tommy Atkins, Haden x carabao 1, Irwin, Jaffra, latter also variety ratio (17.0). ° Brix Blacman (21.3 Brix) Julie (22.0 Brix). Knowledge characteristics essential proper selection use by industry, especially those a higher weight obtaining yields processing.
